aus \u00d6sterreich und auf der anderen Seite das Fleisch von der &#8220;fetten alten Kuh&#8221; von unserem baskischen Produzenten Txogitxu. Zwei absolut unterschiedliche Arten von Fleisch, die wir mit einigen Informationen vorstellen m\u00f6chten.<\/p>\n<p>Dazu haben wir wieder zwei tolle Rezeptideen kreiert, einmal mit unserem Filet aus \u00fcber Reh bis hin zu Wildschwein, wird in \u00d6sterreich von ausgebildeten J\u00e4gern und unter strengen Auflagen und Kontrollen geschossen. Theoretisch k\u00f6nnte man sagen, dass unser Wildfleisch biologischer ist, als das Meiste was auf dem Markt als Bio-Ware ausgezeichnet wird. Da aber die EU-\u00d6ko-Verordnung regelt, dass freilebende Tiere nicht mit einem Bio-Siegel versehen werden d\u00fcrfen, verzichten auch wir darauf.<\/p>\n<p>Praktisch ist es jedoch so, dass jedes Tier von Anfang bis Ende in der freien Natur lebt und jeder J\u00e4ger achtet extrem darauf, dass in seinem Gebiet die Best\u00e4nde der Tiere durch die Jagd nicht gef\u00e4hrdet, sondern kontrolliert, werden.<\/p>\n<p>Das Fleisch von TXOGITXU stammt von keiner bestimmten Rasse. F\u00fcr die Auswahl des Produzenten Txogitxu sind die perfekte Fettabdeckung des Fleisches, eine einwandfreie Herkunft sowie perfekte nat\u00fcrliche Haltungsbedingungen und Ern\u00e4hrung der handselektierten K\u00fche ausschlaggabend. Bei unserem Chuleton Sidreira der Qualit\u00e4tsstufe &#8220;Super Extra Gallego&#8221; handelt es sich ausschlie\u00dflich um Milchk\u00fche galicischer oder portugiesischer Hochlandweiden, die ein langes Leben mit viel Bewegung auf kleinen H\u00f6fen in Freiheit hatten.
