Sie ist simpel und sehr effektiv.<\/p>\n<p>Viel Spa\u00df beim Ausprobieren!<\/p>\n<p>Folgende Schritte sind dabei zu befolgen:<\/p>\n<ol>\n<li>Fleisch auspacken und gut, mit einem Krepp, abtupfen.<\/li>\n<li>Schwarte einritzen. Achten Sie darauf, m\u00f6glichst nicht ins Fleisch zu schneiden, sondern nur die Schwarte bis zur Fettschicht einzuritzen. Es eignet nicht ein Rauten- bzw. Schachbrettmuster.<\/li>\n<li>Nach dem Einritzen wird die Schwarte gro\u00dfz\u00fcgig mit Salz eingerieben. Achten Sie darauf, dass das Salz auch in die eingeritzten Spalten eingearbeitet wird.<\/li>\n<li>Bis auf die Schwarte k\u00f6nnen alle anderen Seiten mit einem Rub Ihrer Wahl eingerieben werden.<\/li>\n<li>In der Zeit in der der Rub einwirkt, heizen Sie den Grill auf ca. 160 \u00b0C bis 180\u00b0C vor. Bitte richten Sie auch eine indirekte Zone ein, in der der Braten auf die richtige Kerntemperatur ziehen kann. Eine gute Zieltemperatur liegt ca. bei 75 \u00b0C.<\/li>\n<li>Wenn der Braten die gew\u00fcnschte Temperatur erreicht hat, regeln Sie Ihren Grill hoch auf ca. 220 \u00b0C bis 230 \u00b0C. Dadurch wird die Kruste richtig \u201eaufploppen\u201c. Lassen Sie das Fleisch so lange auf dem Grill liegen, bis die Kruste f\u00fcr Sie perfekt aussieht, aber nicht so lange, dass der Braten verbrennt.
