W\u00e4hrend Schweinefleisch und H\u00fchnerfleisch in der Regel nur wenige Tage reift, braucht exzellentes Rindfleisch Wochen. Vor allem das Dry Aging gilt unter Fleischgenie\u00dfern als kr\u00f6nender Veredelungsprozess, der f\u00fcr ein einzigartiges Geschmackserlebnis auf dem Grill sorgt. Aber was macht das Dry Aged Steak so besonders? Wie funktioniert der Reifeprozess? Dieses Verfahren hat gleich mehrere Auswirkungen auf das frische Rindfleisch. Zun\u00e4chst einmal sorgt das allgemeine Abh\u00e4ngen des Fleisches daf\u00fcr, dass sich die nach der Schlachtung sehr steifen Muskelfasern lockern. Dies geschieht durch das Wechselspiel zwischen dem Muskelglykogen und dem Luftsauerstoff. Auf diese Weise wird das Fleisch sch\u00f6n m\u00fcrbe und erh\u00e4lt damit einen angenehmen Biss. Bedingt durch diesen Wasserverlust erh\u00e4lt das Rindfleisch nicht nur eine dunkelrote Farbe, sondern auch eine helle Fettmarmorierung. Die Einfl\u00fcsse sind jedoch nicht nur optisch und in der Textur des Fleisches festzustellen, sondern betreffen nat\u00fcrlich auch den Geschmack. Infolge des Wasserverlusts der langen Reifung kommt es zu einer enormen Geschmacks- und Aromakonzentration, die im Gaumen schon beim ersten Bissen ein wahres Geschmacksfeuerwerk abbrennt. Bevor das Dry Aged Fleisch aber zu Steak-Cuts verarbeitet werden kann, muss zun\u00e4chst die trockene und von leichtem Schimmel bewachsene Kruste entfernt werden.
