Wir nutzen immer Kokosnusskohle, da diese gleichm\u00e4\u00dfig und raucharm vergl\u00fcht.<\/h4>\n<h3 style=\"text-align: center;\"><strong>1<\/strong><\/h3>\n<p>Barbarie Ente auspacken und gr\u00fcndlich unter flie\u00dfendem, kaltem Wasser abwaschen.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>2<\/strong><\/h3>\n<p>\u00dcbersch\u00fcssiges Fett und letzte Federkiele entfernen. Anschlie\u00dfend mit einem Spie\u00df die Haut vorsichtig und fl\u00e4chig einstechen. Dadurch kann das Fett besser austreten und die Haut der Barbarie Ente wird knuspriger.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>3<\/strong><\/h3>\n<p>Nachdem die Barbarie Ente vorbereitet ist, wird sie von innen mit Magic Dust gew\u00fcrzt.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>4<\/strong><\/h3>\n<p>F\u00fcr die F\u00fcllung der Barbarie Ente, werden die Mandarinen an beiden Enden angeschnitten, damit der Saft austreten kann. Anschlie\u00dfend werden sie im Ganzen in die Ente gesteckt. Die Ente muss nicht verschlossen werden und kann sp\u00e4ter, offen, auf den Rost gelegt werden.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>5<\/strong><\/h3>\n<p>Wenn die Barabarie Ente gef\u00fcllt ist, wird sie auch von au\u00dfen, rundherum mit Magic Dust bestreut und kann dann so lange liegen gelassen werden, bis der Grill fertig vorbereitet ist.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>6<\/strong><\/h3>\n<p>F\u00fcr eine konstante Temperatur von ca. 160 \u00b0C werden die Kohlek\u00f6rbe rechts und links neben dem sp\u00e4teren Platz der Ente platziert. Anschlie\u00dfend werden die Kohlek\u00f6rbe mit unangez\u00fcndeter Kohle bef\u00fcllt. Auf die unangez\u00fcndete Kohle wird jetzt die bereits gl\u00fchende Kohle verteilt. So kann diese den Rest der Kohle langsam von oben entz\u00fcnden und sorgt f\u00fcr eine gleichm\u00e4\u00dfige Hitze f\u00fcr bis zu drei Stunden. Auf die Kohle kommt noch das R\u00e4ucherholz. Wir haben uns dabei f\u00fcr Kirche entschieden. Der Grill wird jetzt geschlossen, um langsam auf Temperatur zu kommen. Um die richtige Temperatur zu finden, muss man die Zu- und Abluft regulieren. Behalten Sie daf\u00fcr das Thermometer im Auge und passen Sie die Einstellung bei Bedarf an.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>7<\/strong><\/h3>\n<p>Die Barbarie Ente wird jetzt auf einem extra Rost in einer Ofenschale platziert und diese Schale wird mit Wasser gef\u00fcllt. Das sorgt nicht nur daf\u00fcr, dass die Ente nicht austrocknet, sondern auch daf\u00fcr, dass das austretende Fett nicht in Brand ger\u00e4t. Wenn die Ente, auf dem extra Rost platziert ist und der Grill die richtige Temperatur erreicht hat, wird die Schale mittig, zwischen den zwei Kohlek\u00f6rben platziert.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>8<\/strong><\/h3>\n<p>Die Garzeit der Barbarie Ente betr\u00e4gt circa 1 1\/2 bis 2 Stunden. Je nach Gr\u00f6\u00dfe der Ente und Temperatur im Grill kann die Garzeit jedoch variieren. Daher kontrollieren Sie nach 60 Minuten die Temperatur in der Entenkeule. Bei einer Temperatur von 75 \u00b0C bis 89 \u00b0C ist die Ente gar und kann vom Grill genommen werden.<\/p>\n<hr \/>\n<h3 style=\"text-align: center;\"><strong>9<\/strong><\/h3>\n<p>F\u00fcr eine leckere So\u00dfe, r\u00fchren Sie den Senf, die Mayo, die gehackte Petersilie und die Orangenmarmelade zusammen. Anschlie\u00dfend schmecken Sie mit Salz, Pfeffer und Limettensaft ab.<\/p>\n<p>Wenn die Ente fertig ist, kann sie zerlegt und serviert werden.
