Das komplette Rack rundum mit der Marinade einreiben und w\u00e4hrend der weiteren Vorbereitungen zum durchziehen beiseite stellen.<\/p>\n<hr \/>\n<h3><strong>2 | F\u00fcllung und Gem\u00fcsebett vorbereiten<\/strong><\/h3>\n<p>In einer gusseisernen Pfanne, optimaler Weise auf den Infrarotbrennern des Gasgrill, ein wenig vom parierten Fett des Racks auslassen und darin den Speck und die Zwiebeln anschwitzen. Die Laugenstangen w\u00fcrfeln und mit den Eiern, der Milch und Salz-Pfeffer zu einem Teig kneten, es soll kein glatter Teig entstehen sondern die W\u00fcrfel des Laugengeb\u00e4cks sollen bleiben. Zuletzt Speck und Zwiebeln unterheben, das Fett nicht entsorgen sondern f\u00fcr sp\u00e4ter in der Pfanne belassen. Die F\u00fcllung ebenfalls erst einmal zur Seite stellen.<\/p>\n<hr \/>\n<h3><strong>3 | Iberico Krone binden und grillen<\/strong><\/h3>\n<p>Das marinierte Iberico French Rack mit den H\u00e4nden zu einer Krone biegen, die Knochen liegen dabei auf der Innenseite. Die Krone oben wie unten mit einem Bratenfaden in Form binden. Der entstandene Innenraum wird nun mit dem Laugenteig gef\u00fcllt. Die so gef\u00fcllte Krone wird nun auf das Gem\u00fcse gesetzt. Einerseits soll das Gem\u00fcsebett die Krone nach unten entkoppeln und die austretenden Bratens\u00e4fte gleichzeitig das Gem\u00fcse w\u00fcrzen.<\/p>\n<p>Den Gasgrill auf ca. 220\u00b0C einregeln und die Pfanne mittig im Grill platzieren. Nach ein paar Minuten wenn die F\u00fcllung langsam Farbe annimmt, Knochen und F\u00fcllung mit einem St\u00fcck Alufolie abdecken um sie zu sch\u00fctzen. Ich pers\u00f6nlich peile ein Kerntemperatur zwischen 60-64\u00b0C an. Kurz vor erreichen der Kerntemperatur wird die Krone au\u00dfen mit der BBQUE Bacon Sauce eingepinselt.<\/p>\n<hr \/>\n<h3><strong>4 | Anrichten und Genie\u00dfen<\/strong><\/h3>\n<p>Die Krone bei erreichen der gew\u00fcnschten Kerntemperatur, grade das Iberico kann auch zartrosa genossen werden, aus dem Grill nehmen und einen Moment ruhen lassen. Unterdessen kann man bereits das Gem\u00fcse auf einen Teller geben. Als erstes darauf achten den Bratenfaden komplett zu entfernen, und die Krone wie einen Kuchen aufschneiden. Die wunderbaren St\u00fccke wieder auf dem Gem\u00fcsebett platzieren und noch etwas von der BBQUE Bacon Sauce zuf\u00fcgen.<\/p>\n<p>Das wunderbar nussige Aroma des Iberico Karrees passt perfekt zur
