Zum Schluss alles zusammen in eine gro\u00dfe Sch\u00fcssel, mit Frischhaltefolie abdecken und die n\u00e4chsten 3-7 Tage ziehen lassen.\u00a0(Am besten eignen sich Keramik oder Glassch\u00fcsseln) Das St\u00fcck Fleisch am besten Alle 1 1\/2 Tage wenden.<\/p>\n<hr \/>\n<h3><strong>2 | Filet zubereiten<\/strong><\/h3>\n<p>Fleisch aus dem Sud nehmen und den Sud durch ein Sieb geben um die Essigbeize herauszufiltern. Bratfett in einem Topf stark erhitzen und das Fleisch von allen Seiten scharf anbraten. Sobald der Braten fertig ist das St\u00fcck Fleisch herausnehmen und das Gem\u00fcse ebenfalls leicht anbraten. Wenn das Gem\u00fcse fertig ist, den Braten und die Essigbeize hineingeben und das ganze langsam bei 180\u00b0C schmoren lassen. (min. 2h) Optimalerweise alle 30min wenden.<\/p>\n<p>Nach der verstrichenen Zeit kann der Braten entnommen werden und in Alufolie eingepackt werden um ihn warmzuhalten.<\/p>\n<hr \/>\n<h3><strong>3 | So\u00dfe &#038; Beilagen zubereiten<\/strong><\/h3>\n<p>Den verbleibenden Sud durch ein Sieb streichen, und das Johannisbeergelee, Ahornsirup, Rosinen und zuletzt das zerkleinerte Schwarzbrot unterr\u00fchren. Sollte die So\u00dfe trotz der Printen zu d\u00fcnn sein, kann man hervorragend fl\u00fcssige Sahne und Mehl verr\u00fchren und die So\u00dfe damit noch binden. Das d\u00fcrfte nach Einhaltung des Rezeptes aber unn\u00f6tig sein.<\/p>\n<p>Anschlie\u00dfend noch den Rotkohl erw\u00e4rmen und die Serviettenkn\u00f6del in Scheiben schneiden und auf beiden Seiten
